Processed with care at the Gitesi Washing Station, owned by father-son team Alexis and Aime Gahizi, this coffee highlights the dedication of Rwanda’s small family farms. Amazing clarity combined with super juicy mouthfeel and long finish. Each family meticulously tends to their coffee plants and hand-picks the cherries, often growing additional crops for household use. With farms tucked throughout the cool Karongi District, the Gitesi Washing Station receives a steady stream of cherries during the harvest, which typically peaks between May and July.
Gitesi’s processing methods are precise and eco-conscious. Cherries are pulped to remove the skin and 70% of the mucilage before a 10-12 hour dry fermentation process. The coffee is then washed, density-sorted, and soaked for an additional 16 hours to enhance clarity and flavor. Finally, the beans are hand-sorted and dried on African beds for up to 15 days, protected under shade nets during peak sunlight and rainfall.
