This lot has been processed at the Ichamama washing station, managed by the Othaya Cooperative. The cooperative emphasises educating farmers on crop management and other agricultural practices essential for coffee production. The station is situated southwest of the renowned Mt. Kenya in Nyeri County.
After pulping, the coffee is fermented overnight. It then travels through channels to the soaking tank, where it is thoroughly cleaned and soaked. The cherries are fully washed with fresh river water from Ragati River. The coffee is spread out on raised drying tables, with continuous sorting and hand-turning of the parchment throughout the drying process.
In response to the growing awareness of environmental conservation, the factory has constructed wastewater soak pits away from the water source, allowing the wastewater to naturally filter back into the soil. Additionally, the coop encourages its members to plant trees on their farms.
