Literally translating to “Land of Many Springs,” Yirgacheffe offers the ideal topography, elevation, and water sources to produce and process exceptional coffees. Often considered the birthplace of coffee, the region’s coffee trees are a naturally occurring mix of heirloom varieties, cultivated among other plant species in coffee gardens and forests.
This coffee is produced by the SNAP Company, which operates several wet mills and has upgraded its fermentation tanks and raised beds to enhance quality. For us, these efforts are clearly reflected in the cup profile, which showcases Yirgacheffe’s renowned terroir.
SNAP works closely with its network of growers—476 smallholder farmers in total—each owning a small plot of land where coffee is grown alongside other beneficial crops. The person responsible for building and maintaining strong, long-term relationships with these farmers is Hailu Figa, who has been active in the coffee industry for over 12 years.
