His unique natural processing methods bring out vibrant tropical flavors in this Bourbon lot, with slow drying over 30 days creating a cup bursting with fruity notes.
Mauricio’s passion for coffee and commitment to quality are evident in every detail of his work. Building on years of expertise, he has consistently produced award-winning coffees, including multiple Cup of Excellence winners. The estate’s operations showcase his meticulous approach, with precise lot separation, experimental techniques, and sustainable practices such as using rainwater and repurposing coffee cherry skins for cascara.
Finca Himalaya benefits from an ideal terroir of clay and volcanic soils, shaded cultivation, and biodiversity, with cypress and pine trees supporting local flora and fauna. This balance of innovation and sustainability defines its exceptional coffees.
