On our trips to El Salvador we always visit Mauricio (Moe) Salaverria. His group of farms is situated close to the town of Ataco in a very beautiful region of El Salvador.
Finca Himalaya is known for excellence. Mauricio Salaverria has taken generations of coffee knowledge and is always trying to push it further.
When walking around the washing and drying area at the Villa Galicia farm you can see dozens of micro lots carefully separated and being processed with a surgical precision. Everything, from the Anaerobic Plaza to the raised beds is in perfect condition. And by making optimal use of the conditions provided by nature, the whole area just breaths quality.
Maracaturra is a variety that originates from Brazil and is a natural hybrid between Maragogype and Caturra. It is grown on a plot on Finca Himalaya called El Divisadero, a 6-hectare plot of land at 1600 meters altitude.
