Colombian Popayán offers all the rich flavor of traditional coffee without the caffeine. This decaf coffee undergoes a unique decaffeination process that preserves its natural sweetness and distinctive flavor profile. The beans are sourced from 65 dedicated farmers in the Cauca region, renowned for their commitment to quality.
This innovative decaffeination technique, developed in Colombia, involves using ethyl acetate, derived from sugarcane, combined with fresh spring water. Ethyl acetate binds to the caffeine molecules, which are then washed away by the water. This method not only removes the caffeine but also enhances the coffee’s inherent sweetness without altering its flavor profile, unlike conventional methods.
We cupped this coffee blindly and found it very comforting and sweet, reminscent of chocolate, comparable to other caffeinated coffees on the table. When we discovered this was decaf, our minds were blown. We hope yours is too.
This is how we brew it.
A recipe for the perfect espresso depends on a lot of parameters: machine, grinder, water, filter basket, coffee beans etc. In our bar in the Hague we take the following recipe as a starting point:
19 grams of coffee for an output (yield) of 45 grams of espresso (double espresso).
